Keerai Cucumber Kootu

Spinach – 2 cup, chopped

Cucumber – 1 cup, cubed

Green Gram Dal – ¼ cup

Tamarind juice – 1/4 cup

Sambar Powder – 1 tsp

Turmeric powder – 1/2 tsp

Salt

Oil – 1 tbsp.

Mustard – ½ tsp

Urad dal – 1 tsp

Asafetida – a pinch

Onion – 2 tbsp., diced


In a medium pot add the Dhal along with Turmeric and required Water. Cook closed until the Dhal is almost done


Now add Spinach, Cucumber, Tamarind juice, Sambar powder and required Salt. Mix well and cook closed for 10 min.


Temper Mustard, Urad dhal, Asafetida and Onion in Oil and pour over the Kootu.


Serve warm with Rice and Appalam.
