Butter - 1 stick, softened
Garlic - 2 cloves, minced
Cilantro - 1 tbsp., chopped
Chilli paste - 1 tbsp.
Cumin - 1/2 tsp
Lime juice
Salt and Pepper
Corn - 8, husk and silk removed
Cotija cheese - crumbled, for topping
Combine Butter, Garlic, Cilantro, Chilli paste, Cumin, Lime juice, Salt and Pepper in a bowl and mix well.
Preheat grill to medium high. Grill the Corn, turning, until nicely charred, 10 to 15 minutes.
Serve with a spoonful of the flavored Butter on top. Sprinkle with more Cilantro and Cotija cheese.
