Kanda Batata Poha

Poha - 1 1/2 cup, thick (rinsed and strained in colander)

Turmeric - ½ tsp

Green Chilies - 2, chopped

Peanut - 2 tbsp., roasted

Potato - 1, chopped

Onion - 1, chopped

Mustard - 1/2 tsp

Cumin seeds - 1/2 tsp

Curry leaves

Coconut - 3 tbsp., grated

Cilantro

Oil - 3 tbsp.

Sugar - a pinch

Salt


Take the soaked Poha in a large bowl and sprinkle Turmeric, Sugar and Salt in the Poha. Gently mix.


Heat Oil in a medium pan temper Mustard and Cumin seeds.


Add the Onion, Green Chilli and Curry leaves and sauté until the Onion turns translucent.


Sauté the Potatoes until golden and crisp. Keep aside.


Add the Peanuts and the Poha. Mix gently with the rest of the mixture. Sauté the entire mixture for 2-3 minutes on a low flame.


Turn off heat and cover the pan tightly with a lid so the Poha to get steamed for a few minutes.


Remove the lid and garnish with Cilantro leaves and grated fresh Coconut.


Serve Poha hot with Lemon wedges.
